Ingredients

  • 1 kg Yarramundi lamb curry cuts
  • 4 tsp olive oil
  • 1 brown onion, chopped
  • 1 medium sweet potato, cubed
  • ½ cup korma curry paste
  • ½ cup water
  • ⅓ cup coconut milk
  • 2 medium zucchinis, sliced
  • ⅓ cup peas, thawed
  • Roti or rice, for serving
  • Natural yogurt and mango chutney, for garnish

Instructions

  1. Coat the lamb in 2 tsp olive oil and set aside.
  2. In a medium saucepan, heat the remaining oil over low heat and sauté the onion until soft.
  3. Add the sweet potato to the onion mixture, then set it aside.
  4. In a large frying pan, brown the lamb in small batches, then transfer to the saucepan.
  5. In the same pan, cook the curry paste for 1 minute, then deglaze with water, scraping up any browned bits.
  6. Pour the curry paste mixture into the saucepan with the lamb and vegetables.
  7. Bring everything to a boil, then cover and simmer for 45 minutes until the lamb is tender.
  8. Stir in the coconut milk, zucchini, and peas, cooking for another 5 minutes until the vegetables are tender.
  9. Serve hot with roti or rice, and garnish with natural yogurt and mango chutney for added depth of flavor.
