Singaporean-Style Halal Braised Beef Short Ribs

Ingredients

  • 750g Black Angus beef short ribs (200-day grain-fed)
  • 1 tbsp coconut oil
  • 1/2 large onion, sliced
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 1/2 cinnamon stick
  • 1-2 star anise
  • 2 cardamom pods
  • 250ml water
  • 1 tbsp coconut aminos (soy sauce alternative)
  • 1 tbsp apple cider vinegar
  • 1/2 tbsp pure honey (optional, for subtle sweetness)
  • Salt and black pepper, to taste
  • Fresh coriander leaves, for garnish

Instructions

  1. Preheat the oven to 150°C (300°F).
  2. In a large oven-proof pot, heat coconut oil over medium-high heat.
  3. Season the beef ribs with salt and black pepper, then sear them on all sides until deeply browned. Remove from the pot and set aside.
  4. Add onions, garlic, and ginger to the pot, sautéing until soft and fragrant.
  5. Return the beef ribs to the pot and add cinnamon stick, star anise, and cardamom pods.
  6. Pour in the water, coconut aminos, and apple cider vinegar. Stir in honey if using.
  7. Bring to a gentle simmer, then cover and transfer the pot to the oven.
  8. Braise for 3 hours, or until the ribs are fall-apart tender and easily pull away from the bone.
    • Check for doneness at the 2.5-hour mark, as smaller ribs may cook faster.
  9. Once done, remove the ribs from the pot. If desired, simmer the sauce uncovered for a few minutes to thicken and skim off excess fat.
  10. Drizzle the sauce over the ribs, garnish with fresh coriander, and serve hot.
